Jalapeno

The jalapeño pepper is the best known hot pepper in the United States. It is most famous for it's use in most Tex-Mex cuisine like salsas, nachos, and pico de gallo. It has become the "Tex-Mex chile of all chiles".

Jalapeños are quite popular because they're so easily seeded (the seeds and veins are extremely hot). They're available fresh and canned.

Moderately Hot. 2,500-5,000 Scoville units

Cayenne

Cayenne peppers were first grown among the Cayenne district of French Guiana. After colonization, the Portuguese introduced the pepper to Asia and it is now very popular in Indian and Indo-Chinese cuisines.

It produces brilliantly colored, quite hot peppers, four to six inches in length that mature in seventy to eighty days.

Hot.  70,000 to 100,000 Scoville Units
